Chilli Margarita

Makes 1

Red Chilli pepper (about ¼ inch wide)

10 coriander leaves with stem

2oz/ 50ml 1800 Silver Tequila

.75oz/ 20ml agave nectar (substitute: .75oz/20ml of honey)

1oz/ 25ml fresh lime juice

GARNISH

Top end (stem) of the chilli pepper

Sprig of coriander

Fine salt mixed with chilli pepper

large ice cube

chilled glass

In a cocktail shaker, or a cocktail jug, use a muddler and crush the chilli, followed by the coriander. Add one shot of tequila, we used 1800 Silver, one measure of agave syrup, and one measure of fresh lime juice. Pop an ice cube in the shaker and give it a big old Tom Cruise shake!

Take your glass out of the freezer and wipe a half of lime around the brim and roll in your chilli salt. Add your ice cubes and pour over your Margarita, garnish with a slice of chilli and more coriander… enjoy!
