Pink Grapefruit and Tequila Palomas

Years ago Tequila used to make me cry….a benefit of getting older is that is not longer does!!!! Hurrah. This is a recipe I found from the Barefoot Contessa, the fabulous Ina Garten and it rocks..

For two long cocktails

1 1/2 cups freshly squeezed pink Grapefruit juice. (3-4 grapefruits)

1 cup of clear Tequila

1/2 cups freshly squeezed lime juice (3-4 limes)

1/4 cup sugar syrup

2 cups of ice

salt

4 thin wedges of pink grapefruit for garnish

Combine the grapefruit juice, tequila, lime juice and sugar syrup and freeze for at least 6 hours.

When cocktail hour approaches break up the frozen mixture with a fork and transfer half to a blender with 1 cup of ice and 1/8 teaspoon of salt and blend until smooth. Divide the cocktail between two highball glasses, repeat with the remixing mix, ice and salt and top glasses up. Garnish with grapefruit wedge and serve frozen.. be careful of brain freeze! enjoy xxx
