Prawn and Salmon Burgers with spicy mayo

I love a good burger, its not my fav fast food, but if I do have one, I like a really really good one, which i think can be hard to find! So this is a super yummy alternative for me, and they freeze really well too. I have used my favourite Chilli Jam from Ginger Pig, instead of Chilli sauce but any will do!

Serve 4

180g raw prawns

x 4 skinless salmon fillets

4 spring onions

1 lemon

1 small bunch of coriander

1 desert spoon of Aubergine pickle

60g mayonnaise

4 tbsp Chilli sauce

1 tsp olive oil

toasted brioche buns

Briefly blitz 90g raw prawns, 2 salmon fillets, 3 roughly chopped spring onions, the zest of 1 lemon and 1/2 bunch of coriander in a food processor until it forms a coarse paste. Tip in a bowl and then add the other 90g raw prawns and the salmon fillets, roughly chopped, mix along with the aubergine pickle and season. Shape into four burgers and chill for 10 minutes.

Mix the mayo with the chilli jam or sauce, depending how hot you want the mayo to how much you use, 1/4 of coriander, and the remaining spring onion, finely chopped, season to taste

Heat a pan with the olive oil, and fry the burgers for 3-4 minutes on each side, until they have a good crust and it is cooked through.

Toast the brioche buns, add a big dollop of spicy mayo and some coriander and guzzle!!! enjoy xxx
